An Easy Shrimp Pulao

Description

This one-pot Shrimp or Prawn Pulao is bursting with flavour! With simple ingredients, this Shrimp or Prawn Pulao is an easy peasy dinner. I’m sure you are going to love this one and add it to your favourite everyday recipes!

Ingredients

For Seasoning The Shrimp

  • 16 Shrimps
  • 1 tsp Salt
  • ½ tsp Pepper 

For Soaking The Rice

  • 2 cups Rice
  • 1 cup Water

For The Pulao

  • 4 tbsp Unsalted Butter/Ghee
  • 2 tbsp Vegetable Oil
  • 8 Cloves
  • 3 Cardamoms
  • 2 inch Cinnamon Stick
  • 2 Bay Leaves
  • 2 Garlic Cloves
  • 1 tsp Red Chilli Flakes
  • 1 cup Onion, finely chopped
  • 1 cup Tomato, finely chopped
  • 1/3 tsp Turmeric Powder
  • 1 tsp Salt
  • 3 ½ cups Water (for cooking)

Method

  1. Shell, devain and wash the shrimp. Butterfly them to make them look bigger.  Season them with salt and pepper and keep them aside.
  1. Wash the rice under water till the water runs clear.  Now soak the rice in water for 5 minutes.
  1. In a heated pot, add the butter and once the butter has melted pour in the vegetable oil. Add the spices, garlic and red chilli flakes and fry till the spices turn aromatic and the garlic loses its raw flavour. 
  1. Add the finely chopped onions and fry till they turn translucent.  Next add the tomatoes and fry till the tomatoes become soft. Now add in the turmeric powder and sauté for about a minute.  
  1. Next add in the shrimps and sauté till the shrimp are semi-cooked. Toss in the raw rice and stir the rice to mix it well with spices and shrimp.  Add the salt and water. Give it a gentle stir and allow it to come to a simmer.  
  1. Once it comes to a simmer, put the lid on and allow the rice to cook on medium-low heat for 8 minutes, then increase the heat to medium and cook for another 2 minutes.
  1. Take the pot off the heat and let it sit covered for 20 minutes before gently loosening up the grain with a fork. 
  1. Plate it and garnish the shrimp pulao with finely chopped cilantro.
