These sweet little treats called Coconut Ice are a delight on any Christmas platter! With just 3 main ingredients and no baking/cooking required, this Coconut Ice recipe comes together in minutes. You definitely got to give the recipe a try this festive season!
- 300 ml (1 can condensed milk )(300ml/388 grams)
- 1 tsp vanilla extract
- Pinch of salt
- 180 grams icing/confectioners sugar
- 380 grams fine desiccated coconut
- Pink food colour
Line an 8”x8” loose bottom cake pan with margarine and parchment paper and keep it aside. To a bowl, add the condensed milk, vanilla, salt and icing sugar. Give it a mix so that the ingredients blend well. To that, add the desiccated coconut and continue mixing until the desiccated coconut blends in well and absorbs all the goodness of the condensed milk and confectioners sugar. You may need to use your clean hands to mix it together.
Divide the mixture into two equal portions and add just a drop of the pink gel food colouring to one portion. Now in the prepared tray, flatten the white layer then top it with the pink mixture and flatten till you get a nice even top. Cover the pan with aluminum foil and refrigerate for an hour so the coconut ice can set.
