Easy Classic Goan Sheera Recipe

Description

This Classic Goan Sheera recipe is a delicacy! Moist, delicious and loaded with dried fruits, this Sheera recipe comes together in a snap. Enjoy this easy Sheera recipe for a tea/coffee time snack or as a dessert!

Ingredients

  • 1 cup Coarse Semolina
  • 1/2 cup Pure Ghee
  • 1 1/2 cup Sugar
  • 2 1/2 cups Water
  • 1/2 tsp (10) Cardamom, freshly crushed
  • 1/4 tsp Saffron Strands
  • 1 tbsp Milk, warm
  • 2 tbsp Chopped Almonds
  • 2 tbsp Chopped Cashew Nuts
  • 2 tbsp Chopped Pistachios
  • 2 tbsp Golden Raisins
  • Pinch of Salt

Method

In a small bowl, soak the saffron strands in warm milk and keep it aside. To a heated pan, add 1 tablespoon of the pure ghee and roast the chopped almonds, cashews and pistachios for about 3 minutes. To that add the raisins and roast for just 1 minute and remove the roasted dried fruits onto a plate. To the same pan, add another two tablespoons of pure ghee and on medium-low heat roast, the semolina for about 7-8 minutes or until it just changes colour and gets aromatic.

Remove the roasted semolina to a dish. In a pot, heat the water till it comes to a boil. To that, add the roasted semolina. Give it a stir till the semolina blends well with the water. Now cover the pot and allow it to cook on a low heat for 2 minutes. Remove the lid and give the semolina a mix. To the fluffed up semolina, add the sugar. The sugar will start melting and the consistency of the mixture will become thinner.

Next, add the remaining ghee and give it a stir. Add the salt, crushed cardamom, and saffron strands which has been soaked in the warm milk. Give it all a good stir till the semolina has absorbed all the flavour from the cardamom and saffron. Last, add the roasted dried fruits and take the pot off the heat. Mix the dried fruits in till they get well distributed. Serve warm and garnish with some more dried fruits.
