Easy SILKY Smooth Chocolate Pudding

This silky smooth Chocolate Pudding is definitely going to win your heart! This easy dessert comes together in minutes to form the most decadent treat for Valentine’s Day and all year round. I am sure all the Chocolate lovers in your life are going to love this pudding!

Ingredients

  • 150 grams Dark Chocolate
  • ½ cup (100 grams) Sugar
  • ¼ cup (20 grams) Cocoa powder
  • ¼ cup (35 grams) Cornstarch
  • ½ tsp Instant Coffee Powder
  • Pinch of Salt
  • 1 cup Milk
  • 1 cup Cream
  • 2 tbsp (28 grams) Unsalted Butter
  • 2 Egg Yolks (large eggs)

Method

  1. Chop the dark chocolate bar into small pieces. You can also go in with chocolate chips.
  2. Once chopped, add the chocolate bits to a heavy bottom pot in which the pudding will come together on the stove.
  3. In a bowl, add the sugar, sifted cocoa powder, cornstarch, instant coffee powder, and salt. Give them a good mix till they get well combined.
  4. Toss the mix into the chocolate and give it a stir.
  5. Add the milk, heavy cream, and butter. Mix it all together.
  6. Place the mix on medium heat and stir it constantly. Once the mixture has heated and the chocolate and butter have melted, pour a little liquid into the bowl with the egg yolks to temper them. Mix vigorously to blend. Now pour the tempered egg yolk mixture into the hot pudding mixture and continue cooking the pudding on medium heat while gently whisking. Allow the mix to cook until you see a bubble. 
  7. As soon as you see one bubble, take it off the heat. For extra creaminess, pour the pudding through a sieve.
  8. Portion the silky smooth chocolate pudding into your desired dessert cups and allow them to cool completely before covering them with plastic wrap and placing them in the refrigerator for 3-4 hours to set.
  9. To decorate, top with a dollop of lightly whipped fresh cream, some chocolate curls, and sliced fresh strawberries.
