Description
This Goan Beef Roulade Recipe is also popularly known as beef rolls or beef olives. For this recipe, thin slices of beef are marinated in a blend of spices and rolled with a filling without string or toothpicks! The Beef Roulade are then simmered to perfection in a delicious gravy. Ingredients
- **Correction** 3 pounds/1.4 kg Beef (sliced thinly)
- 4 Red Onions (chopped fine)
- 4 Garlic Cloves (minced)
- 3 Potatoes
- 3 Carrots
- 10 Bacon slices
- 1 tsp sugar
- Oil for cooking
For The Marinate
- 10 Kashmiri Chillies
- ¾ tsp Cumin
- ½ tsp Peppercorns
- ¾ tsp Turmeric Powder
- ⅛ tsp Mustard Seeds
- 2 (1 ½“ sticks) Cinnamon
- 6 Cloves
- ¾” Ginger
- 5 Garlic Cloves
- 5 tbsp Vinegar
Method
- In a mixer, blend together all the ingredients for the marinade into a smooth paste.
- Sprinkle some salt and apply the marinade on both sides of the beef slices.
- Slice the potatoes and the carrots into slicks and cut each slice of bacon strips into three parts.
- Take two onions and chop them very finely. Mince the garlic cloves and add to it.
- Take a marinated slice of beef and put a layer of the onion and garlic mix. To one end place a stick of potato, carrot and a piece of bacon and roll the beef over tightly to form a roll.
- In a heated pot, pour some oil and saute the other two onions which have been chopped finely. When the onions turn translucent, add in the leftover marinate and saute for a bit.
- Spread the onion on the base of the pot and place the beef roulades open side down. This will ensure the rolls stay together as they cook, without the need for thread or toothpicks.
- Cover and allow to cook on a medium low heat for 1 hour, then open the pot and give it a swirl. Do not use a spoon to move the roulades around.
- Cover and continue to cook for another 45 minutes before opening and tasting to see if you need to season the beef roulades any more.
- Give them another swirl and allow them to cook and the gravy to thicken for about 15 minutes.
