These Goan Nankhatais are so delicious and just melt in your mouth! With one dough, we are going to make so many unique cookies for this cookie box. These Nankhatais are incredible to serve up in a platter for the festive season or gift in a cookie box!
- 250 grams All Purpose Flour
- 130 grams Pure Ghee/Clarified Butter
- 100 grams Powdered Sugar
- 1 tsp Salt
- 1 tsp Clear Vanilla Essence
Using a hand mixer, cream together the pure ghee and powdered sugar till it turns light and fluffy and almost doubles in volume (for about 5 minutes). To that, add the vanilla essence and give it a little mix. To the flour, add the salt and mix it together.
Now add the flour to the ghee-sugar mix in three additions, mixing on a low speed (stir) till just incorporated. Knead the dough gently and bring it together till it forms a soft ball. Now either weigh 16 grams or take a tablespoon full and roll to make a ball. Lightly flatten and then top with a dried cherry piece. Bake at 300F for about 15 minutes.
