These crispy Oven Baked Chicken Thighs are juicy and packed with flavour! This is my go-to recipe for chicken thighs when I’m in a pinch for time and it is always a crowd-pleaser. Ingredients
Dry Ingredients
- 8 Chicken thighs
- 1 tbsp chilli powder/cayenne pepper
- 1 tbsp smoked paprika
- 1 tbsp oregano
- 1 tbsp onion flakes
- 1 tsp garlic powder
- 1 tbsp salt 1/2 tbsp freshly ground pepper
Wet Ingredients
- 2-3 tbsp olive oil
- 3 tbsp honey
- 1/2 tbsp mustard paste
- Juice of 1 lemon
Method
Clean, wash and pat dry 8 chicken thighs, place them in a baking dish. In a small bowl, mix all the dry ingredients. Add in the wet ingredients and give it a stir till all the ingredients blend together. Now apply the wet rub mixture to the chicken thighs and marinate in the refrigerator for an hour or overnight if possible.
Take out the chicken from the refrigerator and allow it to come to room temperature. Preheat the oven to 425 F and bake the chicken for approximately 35-40 minutes or until the internal temperature reaches 165 F. Garnish with fresh chopped parsley, serve with a side of roasted potatoes and veggies.
