Ingredients
- 1 1/4 cup pumpkin puree
- 1 cup white granulated sugar
- 1/2 cup brown sugar
- 2 large eggs
- 1 cup vegetable oil
- 3/4 cup sour cream
- 2 cups all purpose flour
- 1 teaspoons baking soda
- 1 1/2 teaspoons salt
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 cup finely diced candied ginger
- 2 tsp vanilla extract
- 1/2 cup raw pumpkin seeds (for topping)
Method
Preheat the oven to 350F and line a 9”X5” loaf pan with butter and parchment paper. Use a balloon whisk and in the stand mixer, mix the pumpkin puree, eggs and white and brown sugar together at a high speed till it turns light. With the mixer on low, stream in the oil. Now add the sour cream and vanilla and keep whisking till it is all well incorporated.
In a separate bowl mix together the all-purpose flour, baking soda, salt, ground cinnamon, nutmeg and diced candied ginger. With the mixer on stir, gradually spoon in the dry ingredients until just incorporated. Finish mixing with a spatula to make sure there are no dry strikes of flour. Pour the batter into the prepared loaf pan and bake for approximately 1 hour 30 minutes.
