Have you ever tasted Chicken 65? Crispy on the outside, packed with flavour on the inside, this is a recipe you want to try! This one-pot Chicken 65 is perfect for an easy weeknight meal.
Ingredients
- 1 lb (500g) Boneless Chicken Thighs
- ¾ tsp Salt, to taste
- 2 tsp Ginger Paste
- 3 tsp Garlic Paste
- 3 tsp Kashmiri Chili Powder
- 1 tsp Amchoor Powder (Dried Mango Powder)
- 1 tsp Coriander Powder
- 1 tsp Garam Masala
- 1 tsp Pepper Powder
- 1 tbsp Yogurt
- 4 tsp Lemon Juice
- 1 tbsp Cornstarch
- 1 tbsp Rice Flour
- 1 Egg (white only)
- ¾ cup Oil
- 1 tsp Cumin Seeds
- 2 Garlic Cloves, finely chopped
- 2 Green Chilies,
- 10-12 Curry Leaves
- 3 tbsp Red Chili Sauce
Method
- Clean, wash and pat dry the chicken thighs. Cut them into about 1.5-inch pieces.
- Season the chicken with salt, ginger paste, garlic paste, Kashmiri chili powder, amchoor powder, coriander powder, garam masala, pepper powder, yogurt, and lemon juice. Cover with plastic wrap and allow the chicken to marinate for at least 1 hour or overnight for best results.
- Now toss in the cornstarch, rice flour, and egg white. Mix it together, making sure that the chicken gets well coated.
- In a deep pan on medium heat, add the oil and once the oil has heated, start adding in some of the pieces of the chicken. Make sure not to overcrowd the pan. When the chicken has cooked and got crispy on one side, flip the pieces over and allow them to cook and get crispy on the other side. Remove the cooked pieces of chicken from the pan and place them in a bowl while you finish frying the rest of the chicken pieces.
- Now remove most of the oil from the pan just leaving behind about 2-3 tablespoons of oil in the pan.
- To that add the cumin seeds, finely chopped garlic cloves, slit green chillies, and curry leaves. Sauté till the garlic loses its raw flavour.
- Add the red chili sauce and sauté for another 30 seconds.
- Now toss the fried chicken pieces into the pan and gently flip them around till all the pieces of the chicken get well coated with the sauce.
