Description

Ingredients
For The Cookie Dough
- 113 grams (1/2 cup) Unsalted Butter
- 60 grams (1/2 cup) Powdered Sugar (1/3 cup mentioned in video by error)
- 1 large Egg
- 250 grams (2 cups) All-Purpose Flour
- ½ tsp Salt
- 1 1/2 tsp Pure Vanilla Extract
For The Filling/Stuffing
- 300 grams Pitted Dates
- 100 grams Walnuts
Egg Wash
- 1 Egg Yolk
- 1/2 tbsp Milk
Method
In a bowl, cream together the butter and sugar for about 5 minutes until light and fluffy. To that, add the room temperature egg and pure vanilla extract. Combine on a low speed till just incorporated. The mixture may look a little curdled. Now add the all-purpose flour and salt. With the mixer on very slow or stir, mix it till you get a popcorn-like texture. With clean fingers, lightly knead and bring the mixture together into a smooth dough.
Cut the dough into two and cover with plastic wrap. Place the dough in the fridge to chill for approximately an hour. Cut the walnut halves into half. Cut each date into half and in the pocket of the date fill the walnut. And close the date and roll it lightly to seal it well. Now take out one portion of the dough from the refrigerator. Leave the rest in the fridge as chilled dough is easier to work with. Roll the dough till about 1/16” thick.
Cut the dough into strips depending on the width of the dates. Place the date at the edge of the strip and roll it till it gets covered and the dough overlaps at the bottom. Gently press the open ends to seal. Place them on a lined baking tray seam side down. Continue until all the dough is used up. Separate the egg yolk from the egg white. To the egg yolk add the milk and whisk it together. Preheat the oven to 350 F.
Brush each date roll with the egg wash. Bake for approximately 15-18 minutes or until the tops are lightly golden. Allow the date rolls to cool on the baking tray for 5 minutes then transfer to a cooling rack. Cool completely before dusting with icing sugar and storing in an airtight container.
