As it gets closer to Christmas, my family looks forward to this delicious Milk Cream! With 3 main ingredients, cashew nuts, milk and sugar, this Milk Cream recipe is easier than ever. This melt in your mouth treat is a classic addition to a perfect Christmas sweet platter and is sure to impress!
- 1 litre Milk
- 350 grams White Granulated Sugar
- 100 grams Cashew Nuts
- 1 tbsp Salted Butter
- 1 tsp Clear Vanilla Extract
Soak the cashew nuts in a bowl of water for about 15 minutes. Drain out the water from the nuts and pat dry them with a paper towel. Now in a mixer, grind the cashew nuts with a little of the milk till you get a fine paste. On a medium-low heat, in a flat heavy bottom pot, allow the milk to cook till it reduces to half the quantity. Now add the sugar and allow it to reduce to half once again.
Make sure to keep stirring continuously and occasionally scrape the sides of the pot to prevent it from burning. To the reduced mixture, add the cashew paste. Stir it till it becomes a smooth paste and continue cooking till the mixture thickens. Next, add the butter and continue to cook till the mixture begins to leave the sides of the pot. Finally, add the vanilla extract. Check for doneness and then empty onto a plate to cool. Once cooled put in the desired moulds.
